I used Fantastico to install Cubecart 3.0.17 but I can't actually make any changes i.e. add new products change the text on the first page etc?

I'm guessing its something to do with files being made writable. But which ones ?

Sorry if this is an easy question, but a easy answer would help me out no end.

Acknowledged, find the file:

login.php in admin directory in directory where you installed CubeCart
(eg: public_html/store/admin/login.php)

Then you need your admin user name and admin password
