I recall a conversation on these forums that is quite old (a few years) that discussed what the social media scanner needs in order to identify what exact image to use.

That conversation dealt with a specific social media platform - I don't remember which one.

If Facebook, it may be Facebook's problem. I did a short Internet search for facebook update image post  and found a number of entries about Facebook's cache.

For specific info on a per-product basis, this plugin may be of use. Be sure to ask the author about its capabilities:

I have this in my element.meta.php file. (I use the large image in my skin code.)

<meta property="og:image:width" content="800" />
<link rel="image_src" href="{$PRODUCT.large}"/>
<meta property="og:image:url" content="{$PRODUCT.large}"/>

<meta property="og:url" content="{$VAL_SELF}"/>
<meta property="og:type" content="product"/>
<meta property="og:title" content="{$PRODUCT.name}"/>
<meta property="fb:admins" content="xxxxxx"/>
<meta property="og:site_name" content="{$CONFIG.store_name}"/>
<meta property="og:description" content="{if isset($META_DESCRIPTION)}{$META_DESCRIPTION}{/if}">
