Getting Category Menu To Display Everything, Not Flyouts Or Subcat Cou

I'm revising Carreta-Soft and I want the category menu to appear like this:

Main Category

Sub Cat 1

Sub Cat 2

Sub Cat 3

Main Cat 2

etc

I don't want the subcat flyout or the subcat count, I want it to list everything. I can't find where to make that happen or how.
